The slippery, scaly skin of the Atlantic Cod is usually thrown out when the fish is harvested. As part of its management of a sustainable fishery, Iceland enforces strict quotas , and so Icelandic fishermen, limited in how many fish they can harvest in a year, have had to innovate to find profits from a smaller quantity of fish.
